Food and drink

Couscous is perhaps the most famous of Tunisian dishes; however, lamb forms the basis of most meat dishes. Try Shorba Frik, delicious lamb soup, or Coucha, a tender shoulder of lamb cooked with hints of turmeric and cayenne pepper. Local fish is very tasty, particularly Rouget, red mullet, and many dishes involve an exotic and sometimes explosive blend of spices. Try Tabouna, traditional oven-baked bread, washed down with a glass of refreshing rose wine from Sidi Rais.
